Was eating a sweet potato and it tasted more biter than usual. Any known causes?

Hi, I eat sweet potatos quite frequently and was noticing that the one I ate earlier had a sort of bitter taste to it, especially when I was eating the skin. The skin was slightly lighter than usual. Are there any known causative factors behind why this might have occurred? The inside taste almost normal, but slightly citricy like it was spliced with an orange or something. Usually they don't taste like this, it was a little more strange than usual. But I haven't died so I am assuming it is not a toxicity issue.
